I have to admit, I don’t cook a lot of chicken, turkey, quail, Cornish game hen, or other poultry.  Cooking outside has me extra cautious around any sanitary and health concerns and the variable heat I often work with can make it difficult to cook chicken through without over cooking it.  Even so, it is a staple of many a dish, so we do occasionally cook with chicken.  Here’s a few of my go to recipes.

Dutch Oven Cornish Game Hen

Roast this rosemary cornish game hen and potatoes recipe in a dutch oven over an open camp fire for a classy campground dinner or in your oven at home.

I am always on the lookout for something I can roast over the campfire in my dutch oven. Given that I like to cook over a live fire rather than classic coals, this generally means that I need something that is thick enough to take a sear without turning out well done but thin enough to be cooked through. So, when I saw Cornish game hen on sale after the holidays, I was thrilled. Not only did I have something new, but something well sized for my dutch oven with room for baby potatoes!

Chicken, Mozzarella, And Basil Crescents

Sometimes I can't decide if I want breakfast or lunch. I find Chicken, Mozzarella, And Basil Crescents are a little bit of both.

Crescent rolls are intentionally designed to be easy to make. Fortunately, their design also makes it easy to add items to the dough before rolling it up and baking the roll. Stack a slice of chicken, cheese, and a basil leaf on the triangle of dough. Sprinkle some salt and pepper on top. Roll it all into a crescent roll. Do this with all the crescent dough and then bake in the dutch oven until the pastry is golden brown. Enjoy!

Camper’s Club Sandwich

My driver is a huge fan of bacon. I like it but try to approach it with moderation. All the same, we tend to find ourselves sneaking bacon into all sorts of dishes. Bacon is no longer just a breakfast food. It can be ground into sauces or garnish drinks. But sometimes, we like to return to the classics. Such is the case with the Camper's Club Sandwich.

Chicken and Prosciutto

Some people think that bacon makes everything better. I maintain that prosciutto makes everything better. Tonight, I wrapped chicken thighs in prosciutto to cook in the cask iron skillet. Having learned from my time consuming first experience of cooking chicken over a campfire, I bought boneless chicken. It was skinless—the prosciutto would make a more flavorful replacement. While I did add some salt and pepper, truly, the prosciutto was what defined the meal.
