Adjust-A-Grill Review

Grilling burgers outside, over a campfire on the Adjust-A-Grill.

It's fall and, for us that means one thing: campfire cooking. The air is getting crisper and it is the perfect time to gather around a campfire and enjoy the evening. My campfire cooking toolkit is quite extensive, but it just got a valuable addition with a gift from Adjust-A-Grill. This simple design of a steak driven into the ground and grill that can be attached at different heights along the stake allows me to take my hamburgers and steaks out of the frying pan to be cooked over the fire.

Camp-Punk Sangria

Camp-Punk Sangria is the cocktail recipe for those that would bend over backwards to buck tradition. Even if that means mixing Mello Yellow with wine.

Sangria relies on some base of citrus and some other fruit mixed with a dry red wine and some liquor like brandy. This makes for a relatively simple formula that is easy to tweak for any occasion. Traditionally, the fruit is apple and orange, which I brought. I also brought raspberries, strawberries, and blackberries.

Dutch Oven

In this year's holiday haul, I got a dutch oven and cooking tripod. Obviously, it meant we had some cooking to do.

I have been wanting a Dutch oven for quite a while now. Pretty much all of my cooking on the road has been on a cast-iron skillet. But a cast-iron Dutch oven stands to greatly expand our cooking options. So, when asked what I wanted for Christmas, the answer was easy: a Dutch oven.

Chicken, Mozzarella, And Basil Crescents

Sometimes I can't decide if I want breakfast or lunch. I find Chicken, Mozzarella, And Basil Crescents are a little bit of both.

Crescent rolls are intentionally designed to be easy to make. Fortunately, their design also makes it easy to add items to the dough before rolling it up and baking the roll. Stack a slice of chicken, cheese, and a basil leaf on the triangle of dough. Sprinkle some salt and pepper on top. Roll it all into a crescent roll. Do this with all the crescent dough and then bake in the dutch oven until the pastry is golden brown. Enjoy!

Camper’s Blueberry Almond Stuffed French Toast

There is a day of adventure ahead of us, and it all starts with a little breakfast number that I like to call: Camper's Blueberry Almond French Toast.

I had already seen some pie iron recipes for stuffed french toast. One in particular involved blueberries and cream cheese. I thought about it: there is another dairy product that I love to mix with blueberries for a healthy breakfast. In particular, I like to mix blueberries, sliced almonds, and coconut shavings in greek yogurt. Then, I could take this concoction that I already love and stuff it in french toast with the best type of bread: challah. It was messy and delicious.

Southwest Baked Egg Breakfast Pastry

When you have some left over breakfast ingredients and crescent roll pastry, it's time to through it all together to make a Southwest Baked Egg Breakfast Pastry.

Sometimes, I look in my cooler and think I have a good idea. "Hey, there's some ham to finish off." "I've got a few eggs." "We didn't finish all the crescent pastry when we made hotdogs." "When did I make this pico de gallo?" That's when I come up with a recipe with the sole aim of consuming as many leftovers as possible. Such an approach is the origin of many a classic recipe over the centuries. So, I thought I would try an experiment which I call the Southwest Baked Egg Breakfast Pastry because it really is just a bunch of stuff I threw together.
